Teriyaki Sauce

Ingredients:
- 1/4 cup coconut aminos, tamari, or soy sauce (use tamari for gluten-free option)
- 2-3 pitted dates, soaked in warm water for 10 minutes
- 1 tablespoon apple cider vinegar
- 1 tablespoon grated ginger
- 1 clove garlic, minced
- 1 tablespoon sesame oil (optional)
- 1 tablespoon sesame seeds (optional)

Instructions:
1. In a small bowl, combine the tamari or soy sauce, apple cider vinegar, grated ginger, and minced garlic.

2. Take the soaked dates and blend them in a blender or food processor until smooth. You can add a little bit of the soaking water if needed to achieve a smooth consistency.

3. Add the blended dates to the bowl with the other ingredients and whisk until well combined.

4. If desired, add the sesame oil for extra flavor. Note that this ingredient is optional and can be omitted for a lighter version of the sauce.

5. If using, sprinkle in the sesame seeds and stir to incorporate.

6. Taste the sauce and adjust the flavors to your preference. You can add more sweetness with additional blended dates or adjust the tanginess with apple cider vinegar.

7. Once you're satisfied with the taste, the raw vegan teriyaki sauce is ready to use! Drizzle it over your favorite raw vegan dishes, such as zucchini noodles, cauliflower rice, a salad, or vegetables.
